CHARACTERISTICS OF OIL
SIGHT AND ORGANOLEPTIC OUTLINE:
- COLOUR: Greenish yellow.
- AROMA: Agreeable, balanced and intense with artichoke and green grass scent.
- TASTE: Green fruity, harmonic and full-bodied, with softly bitter and medium pungent sensation.
FILTERING: Sheet or housing filtering, with the possibility of sheet filtering for an intense brightness.

- ACIDITY: < 0.5% in oleic acid
- PREOXIDES: max 12 meq O2/kg
- UV – SPECTROPHOTOMETRY: K232 < 2,0 K270 < 0,18 ΔK < 0,01 EC Reg. 796/02 (ex 2568/91)
- PESTICIDE RESIDUES: Absent
- PHTHALATES: < 3 ppm (particolar attention is paid to DEHP)
- PHEOPHYTINS: from max 1% (February) to max10% (October-November)
- 1,2 – DIGLYCERIDES: from min 80% (February) tomin 65% (December)
- SOLVENTS: Absent
PRESERVATION TERMS: Best consumed within 18 months from the bottling date.
PACKAGING: Box 6/12/24 bottles.
Bottle size: 250 ml – 500 ml – 750 ml
ORIGIN: Obtained from exclusively Italian olives, grown according to organic farming standards and harvested when ripe. Extraction is done by cold mechanical process, i.e. at a temperature lower than 27°C.
CONSUMPTION ADVICE: Generally, it can be used for enhancing the taste of several dishes; in particular:
- RAW: enriching the taste of roasted red meats, legume soups and bruschetta (toasted bread with tomato);
- COOKED: ideal for preparing meat sauces and braised meat.
Remarks: particularly suitable in children diet, since obtained without using plant protection products not provided for in EC Reg. 834/2007 and 889/08.
